1/4 c Red wine vinegar
2 Tbsp Olive Oil
1 tsp Lemon juice
1 clove Garlic (minced)
2 tsp Sugar
1 can (15 oz) Black beans (rinsed and drained)
1 c White corn niblets
1 c Chopped red bell pepper
1/4 c Chopped parsley
1. Whisk together the vinegar, olive oil, lemon juice, garlic and sugar.
2. Combine the beans, corn bell pepper and parsley and toss with dressing
3. Add vinegar and salt to taste
Serves 9 (87 calories per 1/2 cup)
